Miel & Mint. We are going to be sharing some fabulous tips on how to wear and style a blanket scarf, along with
a pumpkin pie muffin recipe that is
paleo, healthy and delicious so you can stay healthy and fit.

How to wear
and style a blanket scarf

I love the holidays; it’s that time
of year where you can bundle up and put on a cute blanket scarf, break out your
boots and cozy sweaters.

This Black Watch Blanket Scarf is my
favorite because it can be worn so many ways. Think: draped over a swingy
blouse with 
skinny jeans, paired with a flowing silk blouse, layered on top of a long
sleeved shirt and vest, or even worn with a 
shift dress and cardigan.

scarf:


Pumpkin Pie
Muffin Recipe

This is also my favorite time of
year to experiment with recipes and baking is my specialty. I love finding
quick, easy and healthy recipes like pumpkin pie muffins. This way I can
indulge in my holiday baking but still fuel my body with nutrition and feel
energized.

Pumpkin Pie
Muffins

¾ cups of Pumpkin Puree

4 eggs

2 egg whites

¼ cup of honey*

½ cup of coconut oil*

½ cup of coconut flour

½ tsp. of baking powder

2 tsp. pumpkin pie spice

2 tsp. vanilla extract

3 tbsp. of Walnuts

*Make sure to heat up in the
microwave for one minute

1.      Preheat
your oven to 400 degrees while preparing all of the dry ingredients together in
a bowl (coconut flour, spices, baking powder) and mix

2.      
Add
the wet ingredients (pumpkin, vanilla extract, honey, coconut oil, eggs) and
mix for 3-5 minutes

3.      
Scoop
mixture into a muffin pan (I sprayed mine with coconut oil) and add your
crumbled walnuts on top

4.      
Bake
for 18-20 minutes (make sure to rotate pan in between)

5.      
Serve
and enjoy!
